So what exactly is cornstarch?
Cornstarch is an extra-fine white powder extracted from corn, almost completely flavorless and colorless. In the kitchen it mainly works as a thickener — but it behaves very differently from flour: it gives you glossy, translucent sauces (perfect for Asian-style sauces!), ultra-smooth custards and lighter cakes. And here's the key: it has twice the thickening power of flour — so use half as much!
How to use Argo Corn Starch
Golden rule: always dissolve the cornstarch in a cold liquid before adding it to a hot one — otherwise you get instant lumps!
Sauces and gravies: 1 tablespoon of cornstarch in 2 tablespoons of cold water = the perfect thickener for any sauce. Glossy, translucent results, never floury!
