What exactly is Cajun cooking?

"Cajun" comes from "Acadian" — those French settlers from Canada (Acadia, now Nova Scotia) expelled by the British in the 18th century who resettled in Louisiana. They blended their French culinary traditions with local ingredients — chillies, okra, rice, Gulf seafood — to create a cuisine unique in the world. The Cajun Holy Trinity?
