In Italy we have Pan de Spagna (Genoise) which is like a sponge cake and very popular so this type of cake is an excellent compliment to what they normally bake here and it tastes GRRREAAAT! Use it to make Black Forrest Cake (old style) cupcakes or plain with a nice liquer flavored chocoloate icing (hey it's Itlay). My Italian relatives here love it and cannot get over how moist and flavorful it is...says a lot when the food picky Italians love it...and my relatives can bake!
